Esquites (Mexican Street Corn)

Esquites also known as vasito de elotes (little corn cup), is a Mexican snack or antojito.

Directions

  1. Remove husk from corn and wash
  2. Fill up a pot with water, bring to boil add corn for about 6 - 8 minutes
  3. Remove corn from water
  4. Shave corn
  5. In a bowl, put 8 oz of plain yogurt
  6. Mix in 2 tablespoons of chipotle sauce
  7. 1 lime juice
  8. Place corn in a bowl
  9. Top with chipotle sauce mixture
  10. Add a dash of pico de gallo chile powder
  11. Sprinkle parmesan cheese to taste (optional)

  • 8 ears of corn
  • 8 oz plain yogurt
  • 2 tablespoons of chipotle sauce
  • 4 tablespoons of Smart Balance
  • 1 fresh lime
  • 1 dash of pico de gallo (chile powder)
  • Parmesan cheese (optional)
